Grilled Fish Steaks Over Hot Fire and a Well Seasoned Grill, begin to Grill the fish by brushing with a bit of Olive Oil. Grill until fish begins to look opaque on one side. Turn fish over to complete cooking. Remove when opaque throuthout.
Place lobster and fresh lime juice in medium bowl; toss to coat. Let stand 15 minutes, tossing lobster occasionally.
Heat olive oil in heavy large pot over high heat. Add lobster pieces and any accumulated juices. Sauté until lobster shells turn bright orange, about 4 minutes. Using slotted spoon, return lobster to same bowl. Reduce heat to medium. Add chopped onion and chopped bell pepper to pot; sauté until soft, about 5 minutes. Add chopped garlic cloves, fresh parsley, and sauté 1 minute. Add diced tomatoes and tomato purée. Cook until juices thicken, stirring frequently, about 8 minutes. Add clam juice, dry Sherry, and bay leaf. Season to taste with salt. . Bring mixture to boil, then add stone crab claws and reserved lobster with any accumulated juices. Reduce heat to medium-low, cover, and simmer until lobster meat is cooked through and tender, about 10 minutes.
Conch Chowder
Ingredients: 3-oz. onion, 3-oz. celery, and 3oz. carrots, 6 oz. potatoes, 8oz. Conch, 2 oz. oil, 2 oz. tomato paste, 1 qt. water. Add salt to taste.
Method: Cut vegetables and conch into ¼ inch dice. Cook the vegetables, herbs for 3 minutes. Add the conch, tomato paste and chopped tomatoes and cook For 10 minutes. Add the water and simmer for 1-½ hours. Skim occasionally and season to taste.
Note: clams, scallops or shrimp may be used in place of conch. Serves 6.
Conch Fritters
Ingredients: 1 lb. conch, 2 oz. onion, 2 oz. celery, 1 egg (beaten), ½ oz. baking powder, 12oz. flour, salt, water.
Method : Cut the conch, and vegetables into ¼ inch dice. Mix the eggs, flour and baking powder and seasonings with sufficient water to form a fairly firm batter. Combine all ingredients and allow to rest for 15 min. prior to deep frying.
Note: Serves 8.
Pulled Pork Recipe
Ingredients:
Stud pork roast with cloves and season with salt and pepper.
Place roast in slow cooker on top of the sliced onion. Cover with the second sliced onion and add enough root beer to fill Crock Pot two thirds of the way.
Cover and cook on low 8 to 12 hours.
Remove roast. Remove and discard cloves, bone and fat as well as any rootbeer, onions and grease remaining in pot.
When pork roast is cool enough to handle, use a fork or your fingers to pull it apart until the entire roast is shredded.
Return the pulled pork to the crockpot. Mix in the chopped onion and BBQ sauce and cover. Heat on high for 1-3 hours or until the onions are soft.
Serve on large, crusty buns with a mustard based BBQ sauce. Garnish with dill pickle spears, thinly sliced raw onion. Serve with crisp, homemade slaw. Put the cole slaw on the pulled pork sandwiches.
